2 C sugar
1 1/2 Coil
4 eggs beaten slightly
2 tsp vanilla
2 2/3 C all purpose flour
2 tsp cinnamon
2 tsp baking soda
1 1/2 tsp salt
3 C grated carrots
1 small can crushed pineapple with juice
1 C chopped walnuts
Cream oil & sugar. Add eggs, vanilla & dry ingredients. Blend in carrots & pineapple & 1 C nuts.
Grease 9x13 cake pan well.
Bake at 350 degrees for 45-60 minutes
Frost with Carrot cake frosting or cream cheese frosting.
