1 medium green pepper, diced
1 medium onion, chopped
2 garlic cloves, minced
1 Tbsp olive or canola oil
1 can (14 1/2 oz) reduced-sodium chicken broth
1 C uncooked long grain rice
1/2 tsp ground cumin
1/8 tsp ground turmeric
1 can (15 oz) black beans, rinsed & drained
1 can (10 oz) diced tomatoes & green chilies, undrained
1 package (10 oz) frozen com, thawed
In a large nonstick skillet, saute the green pepper, onion & garlic in oil for 3 minutes. Stir in the broth, rice, cumin & turmeric; bring to a boil. Reduce heat; cover & simmer for 15 minutes or until rice is tender. Add beans, tomatoes & com; heat through.
Makes 8 servings.
