4 C flour
4 Tbsp sugar
2 packs dry yeast
1 1/2 tsp salt
1 1/4 C water
3 Tbsp oil
1/2 C mashed potatoes
Combine in a bowl 2 C flour, sugar, yeast & salt.
Heat water to lukewarm, add oil.
Add to dry ingredients; beat until smooth. Stir in mashed potatoes & 2 C flour ( a little at a time) to form a soft dough. Knead until smooth & elastic (6-8 minutes)
Cover & let rest 10 minutes
Shape into 16 balls.
Place in 2 greased 9 inch round pans.
Cover & let rise in warm place about 30 minutes or until doubled in size.
Bake at 400 degrees 18-22 minutes.
