Sweet Corn Bread

3/4 C sugar

1/2 C canola oil

2 eggs, beaten

1 1/2 C all purpose flour (sift before measuring)

3 tsp. baking powder

1/8 tsp salt

1 1/2 C stone ground yellow com meal

1 C water

Blend sugar & oil. Mix in eggs. Sift flour again with baking powder, & salt; add corn meal.

Blend dry ingredients with the creamed mixture alternately with water. Start with dry ingredients.

Pour into a greased (use some canola oil) 9 in. square pan. Bake at 400 degrees for 30 minutes.
