Irish Soda Bread

4 C unsifted all purpose flour

1 tsp salt

3 tsp baking powder

1 tsp baking soda

1/2 C sugar

1/2 C butter or margarine

1 egg

1 3/4 C buttermilk (can use soy milk but buttermilk gives much better flavor)

Since buttermilk is normally sold in 1 quart containers I double everything and just pour in the whole container of buttermilk. (Note you get 4 the loafs if you double the recipe)

Combine in a large bowl the flour, salt, baking powder, soda, sugar. Add butter or margarine, & cut in with a pastry blender or 2 knives until crumbly. Beat egg slightly & mix with buttermilk; add to dry ingredients & stir until blended. Turn out on a floured board & knead until smooth, 2-3 minutes.

Divide dough in half, & shape each into a round loaf; place each loaf in an 8 inch cake or pie pan. Press down until dough fills pans. With a sharp knife, cut crosses on tops of loaves, about 1i inch deep in the middle. Bake at 375 degrees for 35-40 minutes.
