Banana Nut Bread

1 1/2 C sugar

1/2 C oil

2 eggs beaten

1 C crushed bananas (for more flavor the bananas should be very ripe)

1/2 C hot water

2 C flour

1/2 tsp salt

1 tsp baking soda

1 tsp baking powder

1/2 C chopped walnuts

Cream sugar & oil. Add eggs & mix. Add bananas, sift dry ingredients, add alternating with water. Add nuts.

Bake in greased loaf pan at 350 degrees until tooth pick comes out clean. About 1 hour.

9 1/4 X 5 1/4 X 2 3/4 pan

Sweet Muffins

1 egg

1/2 C water

1/4 C canola oil

1 1/2 C all purpose flour

1/2 C sugar

2 tsp baking powder

1/2 tsp salt

Heat oven to 400 degrees. Grease 12 muffin tins.

Beat egg; stir in water & oil. Mix in remaining ingredients just until flour is moistened.

Batter will be lumpy. Fill muffin cups 2/3 full.

Sprinkle cinnamon sugar on the batter before putting in to bake.

Bake 20-25 minutes. Check with tooth pick. If comes out clean, ready.

Bran Muffins

Sift & stir together the following then set aside:

1 1/2 C flour

3 tsp baking powder

1/2 tsp salt

1/2 C sugar

1 1/2 C bran cereal add 1 114 C water & let set 2-3 minutes to soften

Add to the softened cereal 1 egg & 1/2 C oil, mix well.

Add the dry ingredients to the cereal mixture. Mix only until all dry ingredients are moistened.

Spoon into greased or sprayed muffin tin. Makes 12

Bake at 400 degrees for 25 minutes

Sweet Corn Bread

3/4 C sugar

1/2 C canola oil

2 eggs, beaten

1 1/2 C all purpose flour (sift before measuring)

3 tsp. baking powder

1/8 tsp salt

1 1/2 C stone ground yellow com meal

1 C water

Blend sugar & oil. Mix in eggs. Sift flour again with baking powder, & salt; add corn meal.

Blend dry ingredients with the creamed mixture alternately with water. Start with dry ingredients.

Pour into a greased (use some canola oil) 9 in. square pan. Bake at 400 degrees for 30 minutes.

Irish Soda Bread

4 C unsifted all purpose flour

1 tsp salt

3 tsp baking powder

1 tsp baking soda

1/2 C sugar

1/2 C butter or margarine

1 egg

1 3/4 C buttermilk (can use soy milk but buttermilk gives much better flavor)

Since buttermilk is normally sold in 1 quart containers I double everything and just pour in the whole container of buttermilk. (Note you get 4 the loafs if you double the recipe)

Combine in a large bowl the flour, salt, baking powder, soda, sugar. Add butter or margarine, & cut in with a pastry blender or 2 knives until crumbly. Beat egg slightly & mix with buttermilk; add to dry ingredients & stir until blended. Turn out on a floured board & knead until smooth, 2-3 minutes.

Divide dough in half, & shape each into a round loaf; place each loaf in an 8 inch cake or pie pan. Press down until dough fills pans. With a sharp knife, cut crosses on tops of loaves, about 1i inch deep in the middle. Bake at 375 degrees for 35-40 minutes.
